Delicious Sugar-Free Pumpkin Pie

Here’s a lovely holiday recipe that has the richness of conventional pumpkin pie, but not the effects of sugar.

Ingredients:

2 cups canned pumpkin
1 ½ cups Luo Han Guo Fruit Syrup
4 eggs
¼ cup cream
1 tablespoon pumpkin pie spices
1/8 teaspoon of salt

Favorite pie crust recipe or buy a ready  made crust from the store

Directions:

  1. Preheat the oven to 450o F.
  2. Bake the uncooked pie crust for 10 minutes.
  3. While baking, mix all the ingredients into a blender or food processor until smooth.
  4. Pour the pumpkin batter into the cooked pie crust and turn down the oven temperature to 350o F. 
  5. Bake for 20 minutes and check.  It won’t be done, but may need foil over it to prevent the crust from burning. 
  6. Continue baking for another 20 minutes or until the center of the pie stays firm when gently shaken.
  7. Cool for at least an hour.  Best served chilled with or without a little whipped cream sweetened with 1-2 tablespoons of Luo Han Guo Fruit Syrup.
