Here’s a lovely holiday recipe that has the richness of conventional pumpkin pie, but not the effects of sugar.
Ingredients:
2 cups canned pumpkin
1 ½ cups Luo Han Guo Fruit Syrup
4 eggs
¼ cup cream
1 tablespoon pumpkin pie spices
1/8 teaspoon of salt
Favorite pie crust recipe or buy a ready made crust from the store
Directions:
- Preheat the oven to 450o F.
- Bake the uncooked pie crust for 10 minutes.
- While baking, mix all the ingredients into a blender or food processor until smooth.
- Pour the pumpkin batter into the cooked pie crust and turn down the oven temperature to 350o F.
- Bake for 20 minutes and check. It won’t be done, but may need foil over it to prevent the crust from burning.
- Continue baking for another 20 minutes or until the center of the pie stays firm when gently shaken.
- Cool for at least an hour. Best served chilled with or without a little whipped cream sweetened with 1-2 tablespoons of Luo Han Guo Fruit Syrup.
