Luo Han Guo Sugar-Free Chocolate Cake

For birthdays or more formal celebrations, this recipe is a winner. It can be made into cupcakes as well.  This will make a 10X10 single layer cake or a dozen cupcakes. Double recipe for a 2 layer cake.

Ingredients:

1.5 cups whole wheat pastry flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 & 1/4th cup Luo Han Guo Syrup
½ cup butter, softened
¼ cup good quality unsweetened dark cocoa
2 eggs
1 teaspoon vanilla

Directions:
Preheat oven to 350 degrees F.

In a mixing bowl, combine the flour, baking powder, baking soda, cocoa and salt

In a separate mixing bowl, blend the eggs, Luo Han Guo Syrup, butter and vanilla until smooth.

Mix the wet ingredients into the dry and blend thoroughly.

Place in oiled 10x10 baking dish or a round cake dish.

Bake for 35 minutes at 350oF.

Cool for 40 minutes.

Rich Chocolate Peanut butter Icing

(double for a double layer cake)
1 cups peanut butter
1 cups Luo Han Guo Syrup
1/5 tbsp unsweetened cocoa powder
½ teaspoon vanilla

Use food processor or mixer to blend until smooth.  You may need more Luo Han Guo Syrup.

Rich Chocolate Glaze

¼ cup unsweetened cocoa
2 tbsp heavy cream, unsweetened
6 tbsp. Luo Han Guo Syrup
4 tbsp. butter
Blend ingredients until smooth in a food processor.
