Ingredients:
6 tbsp or 1/3rd cup butter
1 cup Luo Han Guo
2 eggs
¼ cup unsweetened cocoa powder
1/3rd cup flour
2 tbsp rolled oats
½ tsp salt
1 tsp vanilla
Directions:
Heat oven to 350 degrees
In food processor:
- Pulverize the rolled oats for 30-60 seconds, until more like a flour than flakes.
- Add the butter, eggs and Luo Han Guo and mix well.
- Add the salt, cocoa powder, and flour and pulse until blended. This should take about 10-15 seconds.
- Pour out onto an oiled 10X10 baking dish.
- Bake for 20-25 minutes or until brownies begin to pull away from the edge of the baking dish. Cool in dish for at least 10 minutes.
For those who like a thin glaze of icing on their brownies, in a food processor or with a hand mixer, blend until very smooth, ¼ cup cream cheese, 1/4th cup Luo Han Guo and 1 tbsp unsweetened cocoa powder. Lightly spread over the brownies.
Variations:
- Fold in ½ cup finely chopped walnuts or pecans to brownies by hand after the final blend in the food processor.
- Add 1 heaping tbsp of peanut butter and decrease the butter to 4 tbsp.
